Salmon Niçoise

Spring is a time when we peel off the sweaters and try to soak in some sun after a long winter.
I find that eating lighter lunches can be delightful as apposed to the rich preparations of the winter past.   Proteins and  healthy vegetables can be just as satisfying as a heavy lunch.  The only difference is that you won’t need an afternoon nap. 

Grilled Salad

Think seared ahi, grilled Red Bird Chicken, or roasted salmon.  Composed salads with grilled vegetables.  Asparagus is the first of spring’s gifts.  Contemporary takes on classics like Niçoise can be perfect.  Even steak salad can give you the energy to make it through the day without compromising a healthful diet.
